Selection &
harvesting
We only choose the best fruits, the ones we grow in our own fields or the ones we get from our trusted friends and producers. For its harvest we rigorously wait the right ripeness.
Fermentation
We believe in spontaneous fermentation and in everything that follows nature’s rhythms. We only adjust the temperature during the process, leaving the indigenous and natural yeasts to do their job.
Double
distillation
To us bain-marie double distillation is the only way. Only this way we obtain a true quality difference in our distillates, making them clean and digestible.
Rest
Only with a good amount of rest in stainless steel tanks, without any hurry, the distillate has time to evolve and mature its profound, harmonious character.
Elevation
We give some distillates the chance to age in small barrels. To properly evolve.
Dilution
The secret to the dilution of our distillates is spring water. Water that’s pure and alive.
