Double
distillation
Our distillates are the result of bain-marie double distillation with specially built pot stills, made specifically for our needs. Bain-marie double distillation means automatically limiting the distillation temperature at a maximum of 100-102 degrees, thus avoiding that those components negative for the quality and digestibility of the spirit (high-boiling alcohols, glycerine, grape-seed oil and fats in general) get dragged by the alcoholic vapours.
Double distilling it, then, is fundamental in eliminating those disturbing substances, with the goal of obtaining a noticeably higher quality distillate, clean and digestible. It’s certainly a time consuming, tiring process, even 8-10 times longer than traditional methods, but to us it’s indispensable for the quality we wish to obtain.
