Aged

A NOBLE ELEVATION

Just like the raw materials we distil,

we look for the best quality even with

the wood we use for our ageing process.

We only use French oak barriques, either new or used just for one fermentation of great Bordeaux or Bourgogne white wines.

The toasting is light because we don’t want the character of the wood to go against the aromas of the noble distillate inside the barrique. We only choose to age, for all the necessary time, the distillates that find their maximum expression in the marriage to the round and aromatic notes of the barrel.

The loss of liquid suffered during this double evaporation is consistent, between 5-6% annually, while in countries with colder climates, like Scotland, the Angel’s Share is limited to 1 or 2% max: this is the reason why our distillates rarely go over 10 to 12 years of ageing.
