A SIMPLE

STORY

Like everything we do.

Since he was a small child, Vittorio Capovilla would climb on trees in search of those natural fruits that grew spontaneously in the places of his childhood. Vineyard peaches, wild plums and cornelian cherries were among his favourites. He stole them from farmers, savouring them just as they were: in their complete authenticity.

“My passion for fruit? I was born into it.”

A passion for fruit that would never leave him and that at the age of 40 would convince him to leave his job in the wine-making machinery sector to take part in a journey that would write new chapters in the history of distillation.

It was 1975 when Vittorio Capovilla gets into contact with the art of Mitteleuropean distillation while on a work trip in Germany, Switzerland and Austria.

“As soon as i discovered the world of fruit distillates a spark was born in me. The same one that today burns hotter than ever”

He was left so fascinated by this world (unknown at the time in Italy, if not by some homemade experiments made with pot stills made of salvaged parts and tooling) that he purchased his first still from Austria. Thus, he started approaching this art, so delicate, with rigor, preparation and the passion necessary to work. First with pomaces, then with fruits finally with the machinery itself, dismantling and readapting the stills to suit his needs.

After more than 10 years of persistent work carried on in his free time and the continued confrontations with the greatest German and Austrian masters of the craft, in 1986 Vittorio opens his distillery. The first step that brought him to be recognized as the leading figure of distillation, “Kaiser” to his esteemed German colleagues, or, citing his dear friend Veronelli, the noblest of all distillers.

“Putting one of our distillates in your mouth you can find, what I call, the colour of taste. You understand what it is only after you taste them and it’s this that characterizes our distillates”.

From our first friends and keen associates, involved in the harvesting of fruit and wild berries with the promise of receiving some future bottles, over the years a proper team has been formed. Today, after more than thirty years, Capovilla is a family company that sees as its protagonists sons, nephews and grandsons that share the same passion of the great master.

Pomace, fruits, berries of every type, beer, tobacco leaves, sugar cane: Vittorio Capovilla in these years has experimented a lot (but according to him not enough) and has no intentions of stopping.

 “Every day i wake up and know there’s something new to discover. For this reason, I’m not satisfied by easy things but always try to push forward, to improve myself.”


It’s his research and passion that has gifted the world unique distillates, made of rare fruits, grappa tabacco, beer distillates, Rhum Rhum and much more.This research continues without imposing, to this day, any sort of limit.
