Only this way we obtain honest grappa, in the ethics and in the taste.

We choose only the best pomaces from our winemaker friends who share our philosophy devoted to respecting nature and the search for excellence. It’s only about the best quality grapes, processed without sulphites and treated as a precious gift even after racking them. We request the pomaces to be delivered immediately at the distillery in special containers and airtight bags to avoid any oxidation during transport. Once arrived here at the company, we immediately proceed with the distillation of the red grape pomace while leaving the “virgin” white grape pomace to conclude its fermentation. We proceed in both cases with a double distillation using our original bain-marie system, thanks to which we are able to obtain only the noblest components of the raw material, avoiding any dragging of superior alcohols like glycerine and grapeseed oil. After being distilled, the liquids get stored in stainless steel containers, where they rest for many years before bottling. This period of esterification lets the primary aromas develop and, at the same time, lets new shades arise in the taste. After a period of rest, for all the time necessary, the distillate gets brought at the desired alcohol content with spring water from the Monte Grappa massif, without any added sugar, aromas or similar.
